Chicken and Apple Sausages
Makes 16 patties
1 pound of ground chicken meat
1 medium apple, minced Slightly tart, firm apples work best
½ medium yellow onion, minced
2 T. canola oil
1 t. fennel seeds
¼ C. dry, unseasoned breadcrumbs
1 t. poultry seasoning
1 T. fresh thyme
1 t. salt
1 t. fresh ground pepper
In a medium bowl, combine ground chicken, poultry seasoning and fresh thyme. In a sauté pan, heat oil on medium heat and add onion and apple. Stir until apples and onions are tender. Add fennel seeds and cook for another minute. Directly add the hot mixture into the ground chicken. Add bread crumbs, salt and pepper. Combine with a wooden spoon or with your hands. Shape into patties. Heat a skillet and brush with vegetable oil. Cook patties for 2-3 minutes on each side, until fully cooked.
Serve hot.
